Role Purpose

As the Manager of the Grange Restaurant and San Benedetto’s Pizzeria, you will take full responsibility for the day-to-day operations, leadership and profitability of these separate premises. Your key working relationship for food standards and offering is our Executive Head Chef. You will work collaboratively with other managers across Visitor Experience, sharing resources (including staff), know-how and best practice and point of contact cover in absences, especially during site events. All staff working with you may be required to work in other areas of the wider department, including our Conference Centre and hotel. You will also work collaboratively with the Catering Administrator and support service leads (Finance, Health & Safety, HR, Media, IT and Safeguarding) to ensure an informed, compliant and consistent approach in keeping with our ethos.

Main Responsibilities

The Grange Restaurant & Pizzeria Manager will be responsible for:
  • Ensuring these premises are profitable and identifying opportunities for financial growth
  • Maintaining detailed and accurate sales and profit data and managing the departmental budget
  • Ensuring that staff are appropriately trained, motivated, challenged and supported in their work
  • Identifying and developing internal capability and hosting work experience, work placements and apprenticeships
  • Managing absence, performance and misconduct issues
  • Health and Safety – including risk assessment, fire, evacuation, security and maintenance reporting procedures
  • Ensuring compliance with food safety systems (HACCP) and associated record keeping
  • Developing and implementing standards for excellent customer service and celebrating and responding to feedback
  • Ensuring high standards of cleanliness and tidiness
  • Managing stock (including monthly stock takes) and waste levels/procurement of stock (in conjunction with Catering Administrator)
  • Managing activities in line with Abbey’s emerging sustainability focus
  • Cashing up of tills
  • Devising and implementing promotional campaigns in collaboration with Media & Marketing department

Managerial Responsibilities

As a Departmental Manager you will:
  • Recruit, train, motivate, evaluate and lead the department staff
  • Maintain and promote a safe and healthy working environment
  • Be focused on sustainability – reduce, reuse, recycle, and green and ethical sourcing
  • Lead food hygiene compliance, sales of goods and relevant alcoholic licensing requirements
  • Attend Heads of Department, budget and planning meetings and all training
  • Take responsibility for the implementation of Buckfast Abbey policies and procedures

Person Specification – Skills, Personal Qualities & Requirements

Essential:
  • Experience in a similar, hospitality senior managerial role, preferably of multiple venues
  • Experience of recent, successful financial operations management within hospitality
  • Experience of an autonomous role that requires high levels of collaboration and managing of stakeholder demands
  • Skill and experience in motivating, coaching and managing team members
  • Strong IT literacy, personal organisational and time management skills
  • High level communication and interpersonal skills – verbal and written
